Smoking has been practiced since ancient times for the preservation of highly perishable foods. In addition to preservation, it also adds a wonderful flavor to meat, poultry, fish and other foods. Smoke contains certain chemical compounds that inhibit the growth of harmful bacteria. Carbonyl compounds present in smoke significantly provide a distinctive aroma and flavor to smoked meat. Carbon monoxide and carbon dioxide contribute to produce the bright red pigment. Phenolic compounds present in smoke play an important role in protecting the fat from oxidizing and becoming rancid.
There are two types of smoking such as hot smoking and cold smoking. Various types of woods are used to create different flavors in the smoke. Alder is favorite in the Pacific Northwest, while hickory is quite popular in the eastern United States. Some other types of woods used for smoking are pecan, oak, maple and beech. Melon and Smoked Chicken Salad
Ingredients
1 whole boneless smoked chicken breast, fat and skin removed
2 shallots, minced
2 bunches of arugula
2 tsp minced fresh parsley leaves
1 tbsp white-wine vinegar
1 cup cantaloupe balls
1 cup honeydew melon balls
cup vegetable oil
1 tsp minced fresh tarragon leaves
Tarragon sprigs for garnish
Directions
Discard coarse stems of arugula and wash its leaves thoroughly and spun dry. In a large bowl, mix together vinegar, shallots, minced tarragon and parsley. Add pepper and salt to taste.
Then add oil in this mixture. Mix well, until emulsified.
Add chicken, arugula, cantaloupe balls and melon balls to the salad. Toss the salad, until it is mixed well.
Garnish it with tarragon springs, before serving.
Smoked Pork Chops with White Beans and Cherry Tomatoes
Ingredients
4 smoked pork chops
tsp thyme leaves
1 lb cherry or grape tomatoes (3 cups)
2 tbsp green-olive paste
2 cans cannelloni or other white beans, rinsed and drained
1 garlic clove, mashed
4 tbsp olive oil, divided
Directions
In a heavy skillet, heat 3 tbsp of oil over medium-high heat. Add garlic and tomatoes to heat oil.
Lightly press tomatoes occasionally. Cook for about 5 minutes, until tomatoes start to burst.
In a heavy skillet, heat remaining of 1 tbsp oil over medium-high heat. Then add pork chops to it and brown them on both sides for about 4 minutes.
Add beans, olive paste and thyme into tomato paste. Add pepper and salt to taste. Mix it well. Cover and cook for about 2 minutes.
Then add pork chops to this mixture and cover and cook for about 2 minutes.
Lima Beans with Ham
Ingredients
11 lb hickory-smoked ham steak, fat trimmed, meat cut into inch dice
5 cups frozen baby lima beans
2 tbsp golden brown sugar
1 cups coarsely chopped green tomatoes or unripe red tomatoes
2 cups low-salt chicken broth
12 whole black peppercorns
2 tbsp butter
6 whole allspice
1 large onion, chopped
2 whole cloves
3 large fresh summer savory sprigs
1 tsp hot pepper sauce
2 tbsp Dijon mustard
2 tbsp chopped fresh Italian parsley
Directions
Wrap and tie allspice, peppercorns, cloves and savory in a cheesecloth.
In a large pot, melt butter over medium-high heat. Add onion and fry for about 5 minutes, until it starts to soften.
Add tomatoes and cook for about 3 minutes. Then stir in ham, frozen lima beans, brown sugar, Dijon mustard and spice packet.
Then add chicken broth and gently boil uncovered, until lima beans become tender. Keep boiling for about 25 minutes, until cup liquid is absorbed.
Then add hot pepper sauce. Add pepper and salt for seasoning. Transfer to a large bowl and sprinkle with Italian parsley.

One of the simplest recipes that are incredibly satisfying is Oriental stir fry. You can make an Oriental stir fry with chicken, pork, beef or without any meat. Using one simple frying pan or wok, a variety of vegetables (fresh, canned or frozen), some stir fry sauces and a side of rice- you’ve got a great meal.
Oriental Chicken Stir Fry
Ingredients:
1 pound of chicken breast (cut into cubes or strips)
2 cans of oriental style vegetables (usually includes water chestnuts, green beans, broccoli, baby corn, carrots, etc)
4 to 8 ounces of stir fry sauce (sweet or salty your choice)
4 servings of rice
Olive Oil
Directions:
Cook boil in bag rice on the side as directed. In an oiled skillet or wok add cut chicken, cook moderately and then add in vegetables. Stir frequently with a wooden spoon adding a few spoonfuls of sauce every few minutes. Stir fry for about 10 minutes or until cooked completely through. Serve over rice.
Maple Ham Steak
Ham steak is very easy to make and for most families an awesome meal. You can buy individually sliced ham steaks sold in many supermarkets. Or if you prefer, you can buy a large ham and slice it into to inch thick steaks.
Ingredients:
4 Ham Steaks
4 ounces of brown sugar
8 ounces of maple syrup
4 Yams (sweet potatoes (fresh or canned)
Directions:
Rub 1 oz. of brown sugar into the ham and place in an oven for about 25 to 30 minutes at 400 to 425 degrees F. (or as directed). A few minutes before the ham steak is complete, you can pour some maple syrup on top of the ham steak or cautiously heat up the syrup in a microwave and serve as desired. Ham steaks go great with yams (sweet potatoes). You can cook them in an oven with your ham steak, starting them about 15 minutes before you begin cooking the ham.

BLT Sandwich
One of my family favorites is the BLT sandwich. Although bacon is perhaps not the healthiest food available, you can choose to swap good old fashioned bacon with turkey bacon or even chicken bacon. These products aren’t as bad as they sound and actually very tasty.
Since the BLT sandwich is very simple and only includes bacon, lettuce, tomato, bread and mayo, make sure you buy only the best ingredients including nice thick bread and fresh lettuce and tomatoes.
Ingredients:
1 Loaf of White or Rye Bread
1 head of lettuce
4 beefsteak tomatoes
1 pound of bacon
Directions:
On a griddle cook one pound of bacon. Pat dry removing any excess grease. Now add mayo to two pieces of bread and then top with a sliced tomato and some lettuce. Garnish with a pickle, some olives and some pretzels or chips.

- White Bread Buttered (4 – Slices)
- Margarine (2 Tablespoons)
- Onion chopped (1)
- Cubed ham or sausage (1 cup)
- Shredded cheddar cheese (1 cup)
- Shredded Swiss cheese (1 cup)
- Mushrooms chopped (1 cup)
- Flour (1 tablespoon)
- Garlic ( tsp)
- Salt ( tsp)
- Eggs-beaten (4 )
- Yellow prepared mustard (1 tablespoon)
- Milk (1 cup)
Preparation:
First, you need to butter a 9" square pan. Use some butter on the 4 slices of white bread. Now, keep the bread with the buttered side down in the pan. Next, saut around 2 tablespoons of margarine with 1 chopped onion, 1 cup cubed ham or sausage and 1 cup chopped mushrooms for around five minutes. Once done, spread this over the bread. Now, you have to combine the shredded cheddar cheese (1 cup) with shredded Swiss cheese and around 1 tablespoon of flour. This mixture needs to be spread over the meat mixture.
Mix the tsp garlic, 1 tablespoon mustard, teaspoon salt, 1 cup milk along with the four beaten eggs. Pour this over the other ingredients and refrigerate overnight. All you need to do in the morning is bake it uncovered in the casserole for around 45 minutes at 375 degrees.
Egg and Bacon Casserole Recipe-
Ingredients:
- Butter or margarine (1/4 cup)
- Seasoned croutons (4 cups)
- Milk (2 cups)
- Eggs-beaten (8)
- Dry mustard (1/2 teaspoon)
- Bacon-cooked and crumbled (1 package-12 ounces)
- Shredded Cheddar cheese (2 cups-8 ounces)
Preparation:
Firstly, you need to butter an 11x7x2" baking dish. Place this dish in a microwave oven to slightly melt this butter. Now, pour the croutons over the butter. Sprinkle some cheese on this and set it aside. Mix the milk, eggs and the mustard together. Now pour this egg mixture over the cheese and sprinkle it with bacon. Bake the entire combo for around 40 to 50 minutes at 325 degrees. Before you serve this dish, keep the casserole for 10 minutes at room temperature.

Ingredients:
- Fat-free sour cream (1/2 cup)
- Fat-free cheese (4 slices)
- Green onions (2)
- Lean ham (4 ounces)
- Eggs (2)
- Egg whites (6)
- Fat-free milk (2 cups)
- Grated Parmesan cheese (2 tablespoons)
- Pepper (1/2 teaspoon)
- Dry mustard -optional (1/2 teaspoon)
- Frozen country-style hash browns (2 pounds)
- Nonstick cooking spray
Preparation:
Preheat oven to 350 degrees; meanwhile lightly coat a 9×13 baking pan with cooking spray. Chop the ham and place it in the baking pan. Next, combine the sour cream with the hash browns and place it on top of the ham. Sprinkle some diced cheese on the hash browns. Use a medium bowl to whisk together 2 eggs and the 6 egg whites. Chop the onion and use the remaining ingredients to pour over the hash browns. Now, bake this for an hour at 350 degrees. Cut this into squares before serving. Ensure you let it cool down for around 10 minutes at room temperature, before you begin the cutting.

Potato Pancakes with Ham Topping Recipe
Ingredients:
5 medium-sized potatoes, boiled and mashed
6 slices of ham
1 tablespoon rapid rise yeast
1 cup of lukewarm water
12 dollops sour cream
Salt and pepper
1 cup of plain all-purpose flour
Vegetable oil for frying
3 green onions, chopped for garnish
Preparation:
Mix well-mashed potatoes, flour and yeast, adding some water in a large bowl. Keep it in a warm place for about 30 minutes so that the dough doubles in size. Add a tablespoon of oil into a heated non-stick fry pan. Drop spoonfuls of the dough of about 2-3 inches in diameter into the pan. Cook the potato pancakes for about 3-5 minutes over a medium heat until they turn light golden-brown from both sides. Season it with pepper and salt and transfer to a plate. Add a topping of a small dollop of sour cream and piece of rolled ham on it. Sprinkle some ground pepper and chopped green onion for garnishing.
Leftover Ham and Cheese Bake Recipe
Ingredients
8 ounces chopped ham
4 ounces canned mushrooms, drained
1 large onion, minced
teaspoon salt
3 cups milk
2 cups shredded cheese of choice Swiss, cheddar, pepper jack or mozzarella
6 eggs
1 cup of reduced-fat baking mix
16 ounces frozen broccoli
2 ounces pimentos, chopped (optional)
Preparation:
First preheat the oven to 350F. Keep the mushrooms and onions in a skillet and fry quickly on medium heat. Cover the baking dish with a vegetable spray. Put the layers of ham, broccoli, onions, cheese and pimentos at the bottom of the prepared baking dish. Make a smooth mixture of milk, eggs and baking mix and pour it over the top of ham mixture. Bake for about 50-60 minutes, until middle is set. You should cover the baking dish with a foil for the last 15 minutes, if it is turning brown more than desirable. It can be served warm or cold.
Leftover Ham and Vegetable Medley
Ingredients
4 cups cooked ham, cut into thin strips
1 cup sliced red bell peppers
1 cup sliced green bell peppers
2 cups carrots
1 cup frozen green peas
1 onion, sliced into rings
2 cups fresh broccoli florets
2 cups French green beans, drained
2 eggs, lightly beaten
1 tablespoon vegetable oil
1 teaspoon cornstarch
1 tablespoon soy sauce
cup water
Preparation:
Add onions, carrots, green peas, green beans, red peppers, green peppers and broccoli into the pre-heated oil in a large skillet. Cover and allow it to boil for about 15 minutes. Prepare a well in the center of the vegetables and place the ham in it. Stir it to moisten and keep it at simmer for about 5-10 minutes. Scramble the eggs until firm in a small, lightly-greased skillet. Cut the eggs into small pieces. Mix the ham, vegetables and eggs together. Prepare a mixture of cornstarch, soy sauce and water in a bowl and pour it into the center of the contents of skillet. Stir it immediately till it starts to thicken.
Leftover Ham Loaf Recipe
Ingredients
1 pound ground baked ham
cup quick cooking oatmeal, uncooked
1 pound ground fresh pork
1 finely chopped onion
1 tablespoon spicy brown mustard or prepared mustard
cup milk
1 large clove garlic, minced or chopped fine
3 slightly beaten eggs
1/3 cup of cider vinegar
1/3 cup of brown sugar
1 tablespoon dried parsley flakes
Preparation:
Heat the oven to 350F. Crush the chunks of ham to desired consistency in the food processor. Make a mixture of ham, mustard, fresh pork, oatmeal, garlic, eggs, milk and parsley in a large bowl. Make two loaves in the baking dish. Combine glaze in a small bowl. Pour the glaze over the ham loaves and bake it uncovered for 60-70 minutes. Baste it once or twice during baking. Serve it warm with glaze.

Diced cooked chicken (1 1/2 cups)
Diced cooked ham (1 cup)
Chili powder (1/2 teaspoon)
Salt (1 1/2 teaspoons)
Preparation:
First, you need to preheat the oven to 350 degrees F. Then take a large iron skillet and melt some butter in this. Then, add onion, garlic and green pepper and cook the preparation slowly. Keep stirring the preparation occasionally. Cook the onion till its tender. Then, add the ham, sausage and the chicken pieces to this preparation. Cook it for around for 5 minutes with occasional stirring. Then, you need to add the tomatoes along with their juices to this preparation. Also add the broth, rice, parsley and thyme. Then sprinkle some chili powder and add salt and pepper to taste. Now, add this entire preparation to a large casserole so that it can be baked. To bake, cover it and place it in the oven. Bake the preparation till the rice turns tender. This may take approximately an hour. This delicious Southern cooking recipe is bound to delight all at home.
Macaroni and Cheese Recipe:
Ingredients
Uncooked elbow macaroni (1/2 cup)
Milk (1 1/2 cup)
Butter (3 tablespoon)
Egg yolks – beaten (3)
Soft bread crumbs (1 cup)
Red bell pepper -finely chopped (1/4 cup)
Chopped parsley (2 teaspoons)
Shredded process Cheddar cheese (1 1/2 cups)
Green bell pepper – finely chopped (1/4 cup)
Grated onion (1 tablespoon)
Egg whites – (3) (You would need to beat these eggs with teaspoon of tartar till the mixture turns stiff)
Preparation:
First, you would need to cook the macaroni in boiling water. Then, take a large saucepan and add milk, butter and cheese to this. Cook it slowly with constant stirring over low heat. Let the cheese melt. Use some quantity of this mixture and add it to the egg yolk mixture which has been prepared earlier. Then, add this back to the hot preparation, which is in the saucepan. Let both the mixtures blend well.
Now, you would need to add the macaroni cooked earlier. Stir in some red as well as green bell pepper along with breadcrumbs and onion. Add some quantity of parsley as well. Now, you would need to fold the beaten eggs into the macaroni mixture. Take a non-greasy souffl dish and pour the contents of the pan into this dish. Bake the preparation at 325 degrees for duration of an hour or so. Let the mixture set. Serve this delicious Southern dish immediately!
Fried Green Tomato Recipe:
Ingredients:
Bacon (8 slices)
All-purpose flour (3/4 cup)
Stone-ground cornmeal (1/4 C.)
Salt
Black Pepper
Milk (1 cup)
Olive oil (1/4 cup)
Prepared chili sauce (1 teaspoon)
Lightly toasted rye bread (8 slices)
Large green tomatoes – sliced to 1/4" thickness (around 3-4)
Prepared mayonnaise (1/4 cup)
Arugula – remove the tough stems (2 small bunches)
Preparation:
You need to begin with frying the bacon over medium heat. Let it turn crispy and brown. Now, drain the bacon on paper towels. Then, you need to take a cup and strain the bacon grease into it. Use a paper tissue to wipe the skillet. Then, make a combination of flour and cornmeal in a bowl. Add some salt and pepper to taste. Now, add the milk as well. You need to stir the mixture well.
Now, add some olive oil to the skillet. Use the strained bacon grease as well and place the skillet over medium- high heat. The tomato slices should be dipped in the batter prepared earlier. Do this process in batches of the slices. Fry the tomato slices till they turn a shade of golden brown. Once done, drain slices on paper towels.
Then, take a small bowl to make a combination of mayonnaise and chili sauce. Use around 1- teaspoons of this mixture and spread it over the slice of toast. Spread it only on one side. Then, place around 2 slices of bacon above 4 slices of toast. Use 2 fried tomato slices as a topping combined with arugula. This needs to be covered with the remaining slices of toast. The side with the mayonnaise spread will face downwards as a cover. Cut it into 2 pieces and serve this delicious fried tomato sandwich!
