Baked Chicken Mozzarella Recipe - Family Dinner

As a busy mom and wife, I am always looking for easy and time saving chicken recipes, and this one fits all of those ‘mom’ requirements.

What I like about this recipe is the fact that it is made with every day ingredients that you most likely have on hand. To save time, I will make step 1 the day before and then refrigerate it in a container. The next day, I will reheat the step 1 ingredients in the microwave for 1-2 minutes and then proceed with step 2. I do this so that I am not spending an hour in my kitchen on a busy work or school night.

Ostriche alla Tarantina (Oysters Taranto Style) are breaded and baked with parsley and olive oil. The best pairing is with Franciacorta DOCG, a bubbly wine from Lombardy made like and priced like French Champagne. If you are watching your budget, go for an Italian Chardonnay or Sauvignon Blanc.

Another popular local seafood dish is Seppie Ripiene (Stuffed Cuttlefish) that consists of small cuttlefish stuffed with chopped mussels and squid, breadcrumbs, capers, and grated Pecorino cheese and then baked. Recommended wine pairings include Franciacorta and Sauvignon Blanc.

If you’re in the mood for some unusual pasta, get some orecchiette, literally little ears; a hard wheat pasta native to Apulia. Then make Orecchiette con Cime di Rapa (Orecchiette with Turnip Greens). Add garlic and chili to the greens or a substitute such as Broccoli Rabe. An alternative recipe calls for the greens, onions, prosciutto ham, and lots of grated Pecorino cheese. In either case the secret for great pasta is cooking it in the same water that was used to cook the greens. And don’t eat the stalks or the leaves. Standard wine pairings include Italian Chardonnay, Riesling, or Sauvignon Blanc.

Cut chicken breasts in half and remove skin. In a small bowl, beat eggs. Dip meat into eggs and then dip into dried bread crumbs. Heat butter in a large 12″ round frying pan until melted. Place breasts in the frying pan over medium heat and simmer until it has browned on all sides. Stir in the tomato sauce and basil; reduce heat. Cover and cook over low heat until done, about 30-40 minutes.

Step 2 Ingredients:

1/2 cup Mozzarella cheese, shredded

1/4 teaspoon paprika

In a small bowl, combine the Mozzarella cheese with the paprika until blended.

Arrange chicken pieces in an un-greased 9″ square baking dish along with the rest of the ingredients from step 1. Sprinkle the cheese mixture on top. Preheat oven to 375 degrees and bake in your oven for 15 to 20 minutes or until cheese has melted and is bubbly around the edges

Great Pasta Main Course

Cooking is something people do daily in one way or the other. Whether we are making breakfast, lunch or dinner, making a tuna sandwich or baking a dessert, we need a recipe to follow. Sometimes we may not think that we are following a written recipe because the food is one that is very simple and we have it memorized, like making a sandwich, but in actual fact we are following a recipe even if it is one that is in our subconscious. People are also more health conscious nowadays. An increasing number of people are on a healthy diet and they prefer to cook healthy diet food. They know that a complete meal should have every food group such as meat, carbohydrates, vegetables, fruits, and so no. The healthy diet pyramid shows you what should be in your ingredients.

Here is a great crockpot recipe for a pasta dish main course that consists of ingredients from almost every food group. This pasta dish is chicken lasagna. It sounds like a simple dish but it is exceptionally delicious. This recipe serves 4 people and takes about 5 hours to prepare. It is not difficult to cook but not that easy either. However, the resulting dish is so tasty that it is well worth the effort.

Ingredients needed for the Chicken Lasagna

You need approximately 1 pound of cooked, shredded chicken breasts or more if you like more protein than a normal person. Then, you need 1 large onion, finely chopped, 3 cloves garlic, finely chopped, 2 jars (17 oz.) of spaghetti sauce, 1 package (18 ounce) “no-cook” lasagna noodles, 1 package (9 oz.) of shredded mozzarella cheese, 1 container (9 oz.) of ricotta cheese, 1/4 cup grated Parmesan cheese, 1/4 cup milk, and 1 egg. Now, if you have a type of vegetables that you really like, such as eggplants, you can add some in your ingredients too but make sure they are finely chopped.

Let the process begin..

First you need to brown the onions, any other vegetables, and garlic in a non-stick pan. Then you will add the spaghetti sauce and mix everything together very well. In a separate bowl, you can mix the cheeses, milk and egg. Grease the crockpot a little. Place 1/4 of the spaghetti meat sauce mixture in the bottom of your crockpot then, 1/3 of a layer of noodles. You can break the noodles to fit your crockpot. After that, you can place roughly 1/3 of the cheese mixture on top. Then, repeat the process of: sauce, noodles, cheese for two more layers. Put the remaining meat sauce on top. Cook in the crockpot on low setting for approximately 6 hours until the noodles are soft.
